A latex mattress is a mattress that, surprisingly enough, contains latex. The mattress might have latex as a comfort layer on top of a coil support system, or it might be made fully of latex, with a firmer latex used as the support core instead of coils.
Latex mattresses can be made from synthetic (or man made) latex, natural latex (which comes directly from the sap of the rubber tree), or organic latex (made from natural latex that has extra organic certifications). Some mattresses are made from a mixture of different latex types.

Do Natural Latex Mattresses Sag?
Natural and organic latex are incredibly robust materials. In fact, they are the most durable materials you could hope to find in a mattress. A high quality latex mattress should NOT sag.
Please note, however: if you buy a new mattress and put it on an old worn out box spring, the mattress WILL sag because the box spring will not support it properly. ANY mattress will sag in this situation, so please take note!
Which Is Better, Memory Foam Or Latex Mattress?
I believe the answer for most people is latex. If latex mattresses weren’t so prohibitively expensive here in New Zealand where I live, I would have one myself.
The properties of latex means it works hard to support all types of sleepers, and is hypoallergenic for those who are concerned about allergies.
Latex contains less chemicals and is naturally better at dissipating body heat. It is also more durable.
Some people prefer the feel of memory foam over latex though, as latex can feel slightly bouncy.
If you’re planning on moving the mattress around a lot, a latex mattress is heavier and floppier, so memory foam will be easier to move.
